Fall is here, and my cravings for all things pumpkin spice have begun. This Healthy Pumpkin Latte has a fun twist on a classic drink. It features that same warmly spiced base we all know and love, topped with luscious foam.
This PSL is sugar-free and has a dairy-free option that tastes amazing. It’s on my Fall rotation, and I know you’ll be just as obsessed!
Recommended Ingredients
Health looks different for many people, and it may look different to you based on the day! I know it does for me. That’s why I create recipes that are versatile and can be customized to fit your specific needs. Here are a few suggested ingredients to make the best pumpkin spice latte ever.
Pumpkin Puree: Skip the pie filling and snag a can of pumpkin puree. It tastes pure, has no insane fillers, and you can always add your own warm spices. One can of puree lasts me a few weeks. I like to divide it into silicone ice cube trays and freeze them for later. This makes latte prep easy.
You can also use a regular ice cube tray, it just won’t be as easy to remove the cubes.
Cream: My top choice is plain ol’ heavy whipping cream. It creates the best foam and is such a wonderful treat. If you’re trying to lighten things up, use equal parts half and half.
Dairy-free friends, you can use coconut cream or full-fat coconut milk and get a similar result.
Sweetener: The latte featured in the photos contains Super Sweet, a low-glycemic sweetener from Trim Healthy Mama. I love this sweetener because you don’t need a lot of it!
To keep this drink THM-friendly, use Super Sweet, Gentle Sweet, monk fruit sweetener, or liquid stevia.
Otherwise, use your favorite healthy sweetener to taste!
Pumpkin Pie Spice: The stuff dreams are made of. This warm blend of nutmeg, cloves, cinnamon, and ginger are used year-round in my kitchen. It’s just that good! Buy it in bulk or find an online tutorial to make your own.
Mineral Salt: I love using pink Himalayan salt in all my recipes. Not only is this stuff gorgeous, but it tastes great. Plus, it gives your body a dose of minerals that regular salt can’t. Grey sea salt is another one of my favorites.
Healthy Coffee Syrups: If you make a lot of at-home coffee drinks, you need quality syrup. My current favorite is Miss Mary’s Sinless Syrups. They’re sweetened with a blend of stevia, monk fruit, and erythritol, and they taste amazing.
They’re keto-friendly, plant-based, allergy-friendly, gluten-free, sugar-free..you name it. Miss Mary’s also created a beautiful line of cocktail mixes.

Coffee Frother: The secret to fantastic foam is a little coffee frother. I got mine from Amazon. It was inexpensive, but works great! There is a little bit of a learning curve, but once you get it down, it works like a charm.
Pumpkin Latte Recipe
Pumpkin Latte With Luscious Foam
Ingredients
- ¾ cup heavy whipping cream, half and half, coconut cream, or coconut milk
- ¼ cup unsweetened almond or cashew milk
- 2 tablespoons pumpkin puree
- 2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla
- 1/8 teaspoon mineral salt
- 3-4 tablespoons Gentle Sweet OR 1.5-2 tablespoons Super Sweet*
- 3-4 tablespoons caramel flavored coffee syrup (I used Miss Mary's Sinless Syrups)
- 1 cup of your favorite brewed coffee or cold brew
Instructions
- Place the cream, milk, pumpkin puree, spice, vanilla, salt, syrup, and sweetener in a saucepan over medium heat.
- Stir and heat the mixture until just warmed through. Don't boil or the texture won't be correct.
- Remove from heat and strain. Let cool and place in the refrigerator until ready to use.
- To make your coffee: Remove the desired amount of cream from the jar and froth until foamy. Place the foam over your favorite cup of hot or iced coffee. Enjoy!
Notes
* You can also use your favorite healthy sweetener to taste.

Step One: Heat the Pumpkin Latte Ingredients
Place the cream, milk, pumpkin puree, spice, vanilla, salt, syrup, and sweetener in a saucepan over medium heat. Stir and heat the mixture until just warmed through. Don’t boil, or the texture won’t be correct.
If this mixture is overcooked, it will curdle, and curdle does not make foam. 🙂
Step Two: Strain the Foam
Remove from heat and strain using a wire mesh strainer. Don’t skip this step. You want your foam to be as light as possible, and eliminating heavy pumpkin residue makes all the difference.
Let cool and place in the refrigerator until ready to use.
To make your coffee, remove the desired amount of cream from the jar and froth until foamy. Place the foam over your favorite cup of hot or iced coffee. Enjoy!
Fun Pumpkin Latte Variations:
I’m a huge fan of that pumpkin-caramel combo, but variety is the spice of life! Here are some tried and true variations.
Chocolate Covered Pumpkin: Substitute mocha coffee syrup for the caramel.
Minimalist Latte: Sub simple syrup, use the foam mixture as creamer; no frothing required.
Pumpkin Chai Bliss: Add this foam to the top of your favorite chai. Delish!
Maple Lovers: Sub vanilla syrup, add a dash of maple extract.
Not into pumpkin? Eliminate the pumpkin puree and play around with any of these other flavors. I love salted caramel!
So many “healthy” coffee syrups have fillers or a weird aftertaste. These syrups are the perfect mix of sweet and flavorful. A little goes a long way, and it has a cotton candy sweetness! They are the perfect addition to sauces, beverages, baking, and more!
Helpful Hints
Here are a few tips to make your skills as sharp as a barista!
- Let your foam mixture chill before frothing it. It doesn’t froth half as well when warm.
- This mixture will last in your fridge for a week or so.
- I usually use 2-3 tablespoons of cream. It goes a long way when frothed!
- Add additional syrup or sweetener to your coffee if you like.
