Hillbilly Chicken Tenders (Low-Carb, Sugar-Free, Keto,THM:S!)

Hillbilly Chicken Tenders are a great mix of sweet, spicy and savory! A brown-sugar inspired spice rub tops crispy bacon for a decadent low-carb,keto, THM:S dish.

This recipe for Hillbilly Chicken Tenders is  inspired by a chicken dish my Mama makes! She takes a blend of spices and rubs them on top of bacon-wrapped chicken. The result is an out of this world flavor party! I decided to create my own spice blend for this dish and make it sugar-free so we can freely enjoy this on the Trim Healthy Mama plan.

By the way, I’m 100% sure the men in your life are going to adore this because my man was in heaven. He requested I add this to our “rotation”.

The spices I use are most likely ones that you have in your kitchen already. Another great option for this chicken would be to sprinkle a bit of Bri’s Sweet and Spicy Rub on top if you have that on hand.

We found this chicken was complimented well by green beans and fotatoes, though a large green salad would be amazing too!

I revamped this recipe and simplified it, which is always my life goal! I love using chicken tenderloins because they cook quickly and they’re frugal.

Ingredients
  • 2 t. Chili Powder
  • 1 t. Garlic Powder
  • 1/4 t. Mineral Salt
  • 1/2 t. Paprika
  • 1/4 t. Black Pepper
  • 1/2 t. Super Sweet Blend or 1 t. Lakanto Golden
  • 1-2 lbs Thawed Chicken Tenderloins
  • bacon (1 or 2 for each tenderloin)
Servings: People
Instructions
  1. Preheat the oven to 400 degrees. Mix all spices and sweetener together on a plate. Roll tenderloins in the spices, then wrap each piece with bacon. Bake for 25-30minutes or until juices run clear.

    Delicious, but I found I needed a few changes. I had to use 2 slices of bacon per breast and far less pepper. Next time I’ll use boneless chicken thighs, and put the seasoning sauce on the chicken before wrapping in bacon.

      I also used two strips of bacon per breast and went lighter on the pepper. My kids found it too sweet and asked I just omit the sweetener next time (will only use molasses). The only other change I made was that although the chicken was done the bacon was not, so I stuck it under the broiler for a couple minutes at the end.

    What is mineral salt and what is Super sweet blend?

      Mineral salt is a pink salt. Sometimes it’s called Himalayan salt. You can usually find this at your grocery store. Super Sweet Blend is a Trim Healthy Mama brand of sweetener. If you don’t have it on hand, feel free to sub your favorite sweetener. 🙂
