Mock-O Bell Quesadillas

I like Taco Bell quesadillas.

A lot.

My scale and waistline do not like Taco Bell.

Not one bit.

 

So, I re-created one of my favorite menu items, the Quesadilla to be Trim Healthy Mama friendly. This is an extremely simple recipe. I’m posting the single serve option, so you can whip it up for a quick lunch or dinner. It’s also totally man-friendly. It can be made kid-friendly if your kids like a bit of spice, or simply by omitting the sauce. My toddlers will eat this quesadilla with just the chicken and cheese. 🙂 Those little Mexi-food lovers absolutely adore their “cacos!”

This mimics Taco Bell quite well. Chicken, lots of cheese and a creamy sauce that is to die for!

Now if someone would just THM-ify their churros…

Ingredients
  • 2 3 g Low-Carb Tortillas (I used Mission)
  • 1/2 C. Shredded Mexican Blend Cheese
  • 1/8 C. Ranch Dressing
  • 1/4 C. Mayo
  • Pickled Nacho Jalapenos
  • 1/4 t. Chili Powder
  • 1 Cooked Chicken Breast or Canned Chicken (Season with seasonings of choice. I like to sprinkle salt, pepper, cumin and a pinch of cayenne!

Instructions
  1. Blend the mayo, ranch, chili powder and jalapenos until smooth to create your sauce. I like to add about 4 pickled jalapeno slices along with a dash of the "juice" from the jar. It gives the sauce just a little kick. If you want yours more or less spicy, adjust the number of peppers. Preheat a skillet over medium-high heat. Melt about 1 T. Butter. Lay a tortilla on the skillet and place cheese, chicken and the sauce on top. Place the other tortilla on top. Fry until golden brown, then flip. When the whole quesadilla is golden brown, it's time to eat! We top ours with salsa, sour cream, and guacamole. Yum!
