Cucumber Ranch Dressing

My Cucumber Ranch Dressing takes only a couple minutes to whip up! It’s the perfect way to jazz up your salads and get an extra boost of veggies in. This salad is pretty light as it’s greek yogurt based.

I used to love the store-bought variations of ranch dressing. There was just something slightly fake tasting about them though. I’ve found that whipping up my own dressings tastes better and it honestly doesn’t take very long to make. I love knowing what ingredients are in my dressings, plus, it’s kind of fun to feel like a Food Network star. 🙂

This dressing pairs well with salads, crudites or on-plan crackers. You can thicken it up with a bit of Gluccie to make it more of a spread if you’d like to use it on wraps or sandwiches. This recipe makes about 2 cups of dressing. It stores well in the fridge, though I can’t vouch for how it holds up past a week. That’s about how long it lasts in my house before my hungry boys eat it all. I may have caught a tiny drinking it from the jar before. To each his own, I guess.

Ingredients
  • 1/2 Large Cucumber (Diced and peeled)
  • 3/4 C. Greek Yogurt
  • 1/4 C. Mayo
  • 1 Minced Garlic Clove
  • 2 t. Parsley
  • 1 t. Minced Onion
  • 1/4 t. Black Pepper
  • 1/2 t. Mineral Salt
Servings:
Instructions
  1. Blend all ingredients until smooth. Refrigerate any leftovers. This keeps for up to a week.
