Where are my fellow brunch-loving girls at? I’m not sure what it is about fancy, sweet breakfast dishes, but they get me every-time! With it’s creamy, decadent filling, Chocolate Stuffed French Toast is sure to be one of your new favorites. I know it’s one of mine.
This recipe uses my Nutty Chocolate Spread as its filling. This keeps it in “E” mode for my Trim Healthy Mama girls. No fuel clash here, even though it feels like a decadent Crossover. This recipe is single-serve and you’ll most likely have some spread left over for later. I was totally fine with this fact. 🙂 It just meant that I had a bribing tool for my toddler’s afternoon snack!
I served this with sliced strawberries and additional sweetener sprinkled on top. I’m not going to lie, it made my Monday a little more bearable. It also made it feel like Valentine’s Day, which was made all the more realistic by the blizzard conditions outside my window. 🙂 Like all my recipes, this one is family-approved.
- 2 slices Sprouted Bread
- 1/8 C. Egg Whites
- 1/2 t. Cinnamon
- 1/2 t. Vanilla
- 3 T. Almond Milk
- 2-3 T. Nutty Chocolate Spread (Recipe link in article above)
- Sliced Strawberries (optional)
- Additional Sweetener (For sprinkling on top!)
- Preheat a skillet over medium-low heat. Lightly spray with coconut oil spray. Mix together egg whites, cinnamon, vanilla and almond milk. Dip bread slices in egg mixture and cook until egg whites are set on both sides. Remove from skillet and spread chocolate spread over each slice of toast. Top with strawberries if you wish! Enjoy.
