This casserole gives you all the flavors of a chicken club sandwich..without the bread. I’ve covered juicy chicken breast pieces with a creamy sauce that has just a hint of mustard. The chicken mixture is topped with cheese and bacon and this casserole is finished off with a layer of lettuce and tomato. Though this casserole is served warm, it’s light, refreshing and as my husband said, the perfect dish for those hot days.
This recipe makes one 8×8 inch pan and serves four. I have made this dish as light as I could by using yogurt, but you should pair it with a green salad or non-starchy veggie. This dinner is low-carb, sugar-free and falls under the “S” category for us Trim Healthy Mamas.

- 4 oz. Cream Cheese
- 2 T. Mustard
- 1/2 C. Yogurt
- 1/4 C. Mayo
- 3 C. Chopped and Cooked Chicken Breasts
- 1/2 C. Bacon Crumbles
- 4 Slices Colby Jack Cheese (I used Sargento Thin and found it to be perfect)
- 1 C. Chopped Lettuce
- 1 Small Chopped Tomato
- 1. Preheat the oven to 350 degrees 2. Mix cream cheese, mustard, yogurt, and mayo 3. Stir in chicken breast 4. Place in an 8x8 inch pan 5. Top with cheese and bacon 6. Bake for 25 minutes 7. Top with lettuce and tomato Enjoy!
