My AC is broke, but I was craving a sweet treat. These bars hit the spot! They do require a little stove-top cooking, but not enough to drive the temperature of your house up.
Usually, bars like this include oatmeal, but to keep it in “S” form, I used coconut. Toasting the coconut elevates the bars and gives them a unique “toasty” flavor. I really love the texture of toasted coconut by itself. I also simplified the filling by using just two ingredients. You’re going to love how easy it is to throw together this dessert. Less time spent watching the oven means more time to enjoy the weather!
To toast your coconut, simply place it in a large skillet (I used my cast iron from Lodge) with half a teaspoon of butter. Cook over medium-low heat, stirring constantly until it gets a beautiful golden brown color. Be sure to transfer it to a new bowl immediately since it can scorch quickly!
This recipe makes one 8×8 inch pan. These bars are rich, so use your best judgment and don’t eat half the pan. 😉

Does this not need something to make it sweet? I just noticed that no sweetener was mentioned in the recipe.
Cate H
The coconut layer mentions Super Sweet and the chocolate layer is sweetened enough by the chips. 🙂

In the refrigerator chilling now…! Looking forward to dessert tonight

Yay! I hope you like them!

What would the amount of unsweetened bakers chocolate and powdered pure stevia instead of chocolate chips?
Cate H
Hey, Kim!
I’d say about 4 oz of bakers chocolate and 3-4 doonks. of stevia. You might have to adjust the stevia if you like it really sweet!
kathy
do i toast the coconut separately or do all the ingredients mix together and cook at the same time? thanks.
Cate H
Hi!
You toast the coconut separately. 🙂

I am dairy free. Do you think I could just up the coconut oil in place of butter or do you have a different suggestion? Thanks!
Cate H
Yes, Coconut oil would be fine!

My husband loves these! I have a question though, both times I’ve made this my chocolate , peanut butter mixture seizes. I tried adding the almond milk at the beginning and the second time after the chocolate and peanut butter were melted. It comes out like fudge after it’s been set. What am I doing wrong?
