A lot of you asked how I do breakfast and lunch. Those two meals used to confuse me! The answer is.. I just keep it simple. Take those main breakfast and lunch foods and find a way to THM it by adding or omitting. Here is an example of some great, easy breakfasts. I’ll post some great lunch ideas next week.

Omelets are a great way to fill up without bulking up. You can use a whole egg and more luscious fillings such as sausage, bacon, full-fat cheese and sour cream to have an S breakfast. Or, you could use egg whites, lighter fillings such as chicken breast, laughing cow cheese or light cottage cheese to have an E breakfast. This is my personal favorite because the options are endless!

Again, this option is super easy. For example; for an E meal, you can have your scrumptious egg whites maybe mixed with some veggies and you can have a slice of toast (sourdough, sprouted, Ezekiel or Gwen’s Easy Bread) with all fruit jelly, some low-fat Greek yogurt or cottage cheese, or some in-season berries.
For an S meal, you might have your eggs over easy with some bacon, sausage, cheese, and avocado.

You can have a great S breakfast with berries and cream added to your oats, or you can have an E breakfast by adding Greek yogurt and all fruit jelly. Muffin In a Mug (MIMS) That Take No Special Ingredients
This is a great option for when you want something a little different and these two options help you get your E breakfasts in. Here are my favorite MIMS. Banana Cream Cake (E) and Apple Oat Cake (E).
Breakfasts don’t have to be confusing or a source of panic. If you aren’t a “breakfast food” person, try having last nights leftovers!
