I was in the mood for some good Chinese food, so I came up with this recipe for Chow Mein and it doesn’t disappoint! This recipe has authentic Chinese flavor while still staying budget friendly. I use just one small package of konjac noodles and bulk up the volume with coleslaw and stir-fry mix. There’s just enough noodle texture to keep you happy and that small amount of Gluccie helps fill you up. Trim Healthy Mama’s Not Naughty-Noodles work wonderfully in this recipe, however, if you’re impatient you can find Konjac noodles at your local grocery stores. My store had them labeled “Miracle Noodles”.
I used chicken to give my Chow Mein ample protein, but feel free to sub salmon or another type of meat! This is an S meal, so you can use whatever type of meat you wish. 🙂 If you don’t have stir-fry mix, throw in whatever non-starchy veggies you have in the house. Cauliflower, broccoli, peppers and a bit of onion taste wonderful.
This makes a HUGE skillet full of yummy goodness. I’ve been eating this all week for my lunch and it is even good cold. Totally takes me back to my unhealthy cold Chinese food leftover days. 😉
